Apple Pie

For the Pie Fillong:
6                                   Granny Smith Apples
½ Cup                          Butter
3 Tbps                         All-Purpose Flour
½ Cup                          Granulated Sugar
½ Cup                          Brown Sugar
¼ Cup                          Water

For the Crust:

2 ½ Cups                      All Purpose Flour
½ tsp                           Salt
1 Cup                           Butter (cold)
5 Tbsps                        Water (cold)
1 Tbsp                         Milk

Preheat Oven to 425 degrees,

In a bowl, mix together the salt and flour.  Add the cold butter flour.   Using a pastry cutter cut the butter until the mixture becomes crumbly.  Add the cold water and mix into a dough bowl.
Divide the dough into half and cover with plastic wrap.  Refrigerate until ready to use.

Clean, peel and core the apples.  Cut the apples into quarter pieces.   In a sauce pan melt one stick of butter then add 3 tablespoons of flour and whisk together.   Add the sugar and brown sugar. Add the ¼ cup of water and cook until all the sugar has dissolved. Turn off the heat and set aside.

Place the dough on a floured surface and roll it out to cover a nine-inch pan. Add the apple and sprinkle with cinnamon.  Coat the apples with the syrup then cover with remaining pie crust.
Seal the edges of the pie with a fork then place 4 slits in the dough on top.  Brush the top crust with milk then transfer to the preheated oven and allow it to cook for 15 minutes at 425.  After 15 minutes reduce the oven temperature to 350 then allow it to cook for another 50 minutes
