Beef Stir Fry

1 1/2 lbs     Flap Steak
2 tsps          Cornstarch
1 tsp            Baking Soda
1 Tbsp         Vegetable Oil
2 Tbsps        Water
1 stalk          Ginger (sliced)
4                    Scallions
1/2 Cup.      Red Onion
1 Tbsp         Oyster Sauce
4 Tbsps        Soy Sauce
1 Tbsp          Sesame Oil
2 Tbsps        Cooking Wine
1 Tbsp          Brown Sugar
1/2 Cup        Water
1 tsp              White Pepper
                       
Vegetable Oil
Slice the beef into bite size pieces then season add the cornstarch, baking soda, and white pepper. Mix until well coated. Add 2 tablespoons of water and mix well. In a separate bowl, combine 1/2 cup of water, soy sauce and oyster sauce and mix well. Cut your onion, scallions and ginger then set them aside. In a wok, deep fry the beef for one minute then remove it and most of your oil from the pan (leaving about 3 tablespoons of oil). Sauté your ginger for one minute then  add the onion and half of the scallions and continue to sauté for another minute. Return the beef to the pan and cook for two minutes then add the sauce and brown sugar. Allow your sauce to reduce by one third and has thickened. Add the remaining scallion and mix well. Add the wine and sesame oil and cook for an additional minute then it is ready to serve.
