Beer Braised Beef Short Ribs

Preparation:
Preheat the oven to 375 degrees.
Add the oil to a Dutch Oven and using medium high heat bring the oil to temperature then brown your ribs on all sides. After they have browned remove the ribs and set aside. Now sauté the onions for five minutes. Add the garlic, celery and carrots and continue sautéing for another five minutes. Add the tomato paste and brown sugar and mix well. Pour in the beef stock and beer then season with the salt and pepper. Add the thyme and bay leaf then return the short ribs to the pot. Bring the liquid to a light boil, cover then transfer to the preheated oven. Allow the ribs to braise undisturbed for two hours. After two hours remove from the oven and serve.
