 Bourbon Chicken

2 lbs                Chicken Breast
1 clove             Garlic
1 Tbsp             Cornstarch
2 Tbsps           Olive Oil
2 Tbsps           Ketchup
1 Tbsp             Apple Cider Vinegar
1/3 Cup           Soy Sauce
1 tsp                Red Pepper Flakes
¼ tsp               Ginger
1/3 Cup           Brown Sugar
¼ Cup             Apple Juice
½ Cup             Water

Cut the chicken into bite size pieces then set them aside. Add the olive oil to the frying pan then sauté the garlic for one minute. Add the chicken and cook for ten minutes. Remove the chicken from the pan and set it aside. To the same pan add the water, soy sauce, apple juice and apple cider vinegar and bring to a slight boil. Next add the ketchup, cornstarch, red pepper and ginger and mix well. Add the brown sugar and mix until the sugar has dissolved. Return the chicken to the pan and allow it to cook on medium low heat until the chicken is tender or until the sauce has reduced.
