Chicken Patties

Puff Pastries
3                      Chicken thighs
½ Cup              Red Onion
2 Tbsps            Green Onion
2 Tbsps            Vegetable Oil
2- ½ Tbsps       Butter
¼ Cup              Mild Cheddar Cheese
1 Cup               Milk
2 Tbsps            All-Purpose Flour
¼ Cup              Heavy Cream
1                      Egg
1 – ½ tsps.       Salt
2 tsps              Black Pepper

PreHeat the Oven 385 degrees.

Add ½ tsp of salt to water and bring to a boil.  Add the chicken to the water and cook for 35 minutes.  Remove the chicken from the water and allow it to cool.  Once the chicken has cooled, shred the chicken and set it aside. Add the oil to a pan and bring to temperature.  Sauté the red onions for 3 minutes.  Melt the butter in the same pan with the onions then add flour and allow it to brown.  Add the heavy cream and milk.  Add the chicken, green onion, salt and pepper.  Remove from the heat and set aside.  Using a round pastry cutter cut the puff pastry.   Coat  each round pastry with the egg wash then add the chicken and cheese.  Now cover with another pastry then again brush with the egg wash.  Top with another pastry and give it a final brush with the egg wash.  Place in the preheated oven and cook for 35 minutes.
