Chocolate Cake Recipe
 
1 ¾ Cups         All-Purpose Flour
2 Cups                         Sugar
1 ½ tsps           Baking Soda
1 ½ tsps           Baking Powder
¾ Cup             Dark Cocoa
½ Cup             Canola Oil
1 tsp                Vanilla Extract
1 tsp                Salt
1 Cup              Milk
2                      Eggs
1 Cup              Hot Water
 
For the Icing:
8 oz                 Cream Cheese
½ Cup             Butter
¾ Cups                        Dark Cocoa
½ tsp               Cinnamon
4 Cups             Confectioners’ Sugar
1 tsp                Vanilla Extract
4 Tbsps           Heavy Cream
 
Preheat Oven to 350 degrees.
 
In a mixing bowl combine the sugar, flour, cocoa powder, baking powder, baking soda and salt and mix well. Next add the milk, eggs, canola oil and vanilla extract and mix for two minutes. After two minutes slowly pour in the hot water and mix well. Evenly distribute the batter to 3-8 inch pans that has been sprayed with oil and dusted with cocoa powder. Transfer to the preheated oven and allow them to cook for 30 minutes. After 30 minutes remove from the oven and allow them to cool on a wire rack. To make the icing, sift together the confectioners’ sugar, cocoa powder and cinnamon. In a mixing bowl, cream together the cream cheese and butter until it is smooth. Add the vanilla and heavy cream. Add the cocoa and sugar mixture and continue until it is well combined. After the cakes have cooled, apply the icing then it is ready to serve.
