​French Macarons
 
1. Strawberry Cheesecake Macarons
 
3                      Egg Whites
¼ Cup              Sugar
1-2/3 Cups      Confectioners’ Sugar
1 Cup               Almond Flour
3 drops            Red Food Coloring
                        Strawberry Preserves
                        Cream Cheese Frosting
 
2. Nutella Macarons
 
3                      Egg Whites
¼ Cup              Sugar
1-2/3 Cups      Confectioners’ Sugar
1 Cup               Almond Flour
                        Nutella
3 drops            Teal Food Coloring
 
Preheat oven to 300 degrees.
 
In a bowl sift together the almond flour and confectioners’ sugar.  In a mixing bowl beat the egg whites on high speed.  Add the granulated sugar then the food coloring.  Continue beating until it has a meringue consistency.  Fold the egg white into the flour mixture until they are well combined.  Line a cookie sheet with parchment paper and pipe the dough into one inch circles.  Gently tap the cookie sheet to remove any bubbles.  Allow to sit for 30 minutes before baking.  Bake for 13 to 15 minutes.  Remove from them from the oven and allow them to sit for 15 minutes before filling.  Fill the teal cookies with the Nutella.  Fill the pink cookies with the strawberry preserves and cream cheese frosting.
