Greek Salad

1                 English Cucumber
1/2             Red Onion
1 Cup.       Kalamata Pitted Olives
1                 Green Bell Pepper
2                 Roma Tomatoes
​2                 Avocados
1 Cup        Feta Cheese (crumbled)

For the Dressing:
3 Tbsps       Red Wine Vinegar
1/4 Cup      Extra Virgin Olive Oil
1 tsp            Dijon Mustard
1 Tbsp.        Fresh Lemon Juice
2 cloves      Garlic
1/2 tsp        Oregano
1/2 tsp        Black Pepper
1/2 tsp        Kosher Salt

In a bowl, combine the olive oil, red wine vinegar, lemon juice, mustard, garlic, oregano, salt and pepper. Mix until well combined then set it aside.
Chop all of the vegetable then place them in a large bowl.  Top with the cheese then add the salad dressing. Mix well and serve.
