Peach Cobbler Recipe
 
3 lbs                Frozen Peaches
1 Cup              Granulated Sugar
1 Cup              Brown Sugar
½  Cup            Butter
1½  tsps           Vanilla Extract
1 tsp                Lemon Juice
1 Tbsp             Milk
1 tsp                Cinnamon
1/8 tsp             Nutmeg
1/8 tsp             Ginger
 
For the Crust:
2 ½ Cups         All-Purpose Flour
1 Cup              Butter (Cold)
½ tsp               Salt
½ Cup             Ice Water
 
Preheat Oven 350 degrees.
 
Combine the salt, flour and butter in a food processor and pulse until just combined. Transfer to a large bowl then slowly add the cold water and mix until it forms a dough. Divide dough into two halves roll into balls then cover with plastic wrap and place in the refrigerator for 30 minutes. After 30 minutes remove them from the refrigerator then on a clean and flour surface knead the dough.  After kneading roll on ball out to fit your baking pan. Sprinkle your dough with a small amount of cinnamon and sugar then cook for 12 minutes. In a large pan, melt your butter. Add the peaches and cook for 5 minutes. After 5 minutes add the sugar and brown sugar then cook until the sugars have dissolved. Add the milk, vanilla, nutmeg and cinnamon then continue cooking until the peaches just soften. Turn off the heat then add the lemon juice. Transfer the peaches to the baking dish then cover with your remaining dough. Transfer to the oven and make for 45 minutes.
