Sweet Potato Pie Recipe
3 lbs Sweet Potatoes/Yams 1 ¼ Cups Granulated Sugar 1 Cup Brown Sugar 4 Eggs ¼ Cup Milk 1 Cup Butter 1 Tbsp Self-rising Flour 2 Pie Crusts 1 tsp Lemon Extract 2 tsps Vanilla Extract 1 tsp Cinnamon 1 tsp Nutmeg 1/8 tsp Ginger ½ tsp Kosher Salt Preheat Oven 350 degrees. Add the potatoes to a large pot of water then boil for 30 minutes or until your potatoes are easily pierced by a fork. After 30 minutes remove the pot from the heat then rinse with water and peel the potatoes. Place the peeled potatoes in your mixing bowl add the melted butter then mix well. Add the granulated sugar, brown sugar, cinnamon, nutmeg, ginger, salt, vanilla extract, lemon extract, flour, milk and eggs. Transfer the batter to the pie shells and then transfer the pies to the preheated oven and bake for one hour. After one hour remove them from the oven and place on a wire rack to cool. |
