Lemon Meringue Pie Recipe
2 Tbsps All-Purpose Flour 3 Tbsps Cornstarch 1 Cup Sugar 1 ½ Cups Water ½ tsp Sea Salt ½ Cup Fresh Lemon Juice 1 Tbsp Lemon Zest 1 9in. Pie Crust 4 Egg Yolks 2 Tbsps Butter For the Meringue: 4 Egg Whites 6 Tbsps Sugar Preheat Oven to 350 degrees. Using a fork place several holes in the bottom of the pie crust then bake in the oven and cook for ten minutes. After ten minutes remove from the oven and set it aside. In a saucepan add the sugar, cornstarch, flour and salt. Add the lemon zest, lemon juice, water and egg yolk and whisk until well combined. Turn the burner onto medium heat, add the butter and cook until your sauce has thickened. Add the filling to your pie crust and set it aside. To make the meringue add the egg whites to your mixer and mix on high speed. Add the sugar and continue to mix until stiff peaks are formed. Top the pie with the whipped eggs then transfer to the oven and cook for twelve minutes. After twelve minutes remove from the oven and allow it to cool for ten minutes before placing it into the refrigerator. Refrigerate for at least two hours then it is ready to serve. |
