Roasted Chicken
1 5lb Chicken 1 Tbsp Fresh Rosemary ½ Tbsp Fresh Thyme 1 med. Onion 3 stalks Celery ½ Cup Orange Juice 1 stick Butter (softened) 1 Tbsp Kosher Salt ½ Tbsp Black Pepper ½ Cup Water |
PreHeat Oven 400 degrees
Combine butter, rosemary and thyme. Place chicken in a roasting pan. Drizzle the orange juice on the chicken and inside the chicken cavity. Next coat the chicken with the butter and herb mixture. Season with salt and pepper. Stuff chicken cavity with the onion and celery. Add the water to the roasting pan then transfer chicken to the preheated oven. Cook the chicken for 1hour and 15 minutes.
