Seafood Pasta Salad
2 cans Tuna 1-1/2 cups Shrimp 1 box Rotini Pasta 4 Boiled Eggs 3 stalks Celery (chopped) 1/2 cup Red Onion (chopped) 1 cup Mayonnaise 2 Tbsps Black Pepper 3 tsps Salt 1 tsp Old Bay Seasoning 1 tsp Paprika 1 Tbsp Olive Oil In a double boiler, steam the shrimp for 7 minutes then set aside. In a medium saucepan, add 5 cups of water, 2 teaspoons of salt and 1 tablespoon of olive oil. Bring the water to a boil then add the pasta. Allow pasta to cook for 8 minutes stirring occasionally. After 8 minutes remove it from the heat and drain the water. Transfer the pasta to a bowl then add the tuna, celery, onion and eggs and mix well. Add the shrimp, salt, pepper, old bay seasoning and paprika and mix well. Add the mayonnaise and mix well. |
