1 ½ lbs Shrimp 1 lb Fettuccine 3 Tbsps Olive Oil 3 cloves Garlic ½ Cup Onion 2 Cups Heavy Cream 1 8oz bag Spinach 1 Cup Parmesan Cheese ½ Cup Sun-dried Tomatoes ½ Cup Parley 1 Tbsp Lemon Juice ¼ Cup White Wine ½ tsp Red Pepper Flakes 2 tsps Kosher Salt ½ tsp Black Pepper
Add 1 tablespoon of olive oil and 1 teaspoon of salt to a pot of water then bring to a boil. Add the fettuccine and cook for 9 minutes. Drain off the water then set it aside until later. In a frying pan add 2 tablespoons of olive oil and bring to medium heat. Cook the garlic for 1 minute. Add the shrimp to the pan then season with the salt and pepper. Cook the shrimp for 2 minutes then remove them from the pan and set them aside until later. Add the wine and lemon juice and deglaze the pan. Now add the onion, parsley, tomatoes and spinach and sauté for 2 minutes. Add the heavy cream and add the parmesan cheese and mix well. Season with the red pepper flakes and return the shrimp to the pan and continue to cook on medium low heat for 3 minutes. Add the fettuccine and continue cooking for another 2 minutes then it is ready to serve.
