Smothered Chicken
Chicken Thighs ½ Cup Canola Oil 1 Cup Onions 1 Cup All-Purpose Flour 1-1/4 Cup Chicken Broth 1 tsp Smoked Paprika 1 tsp Onion Powder 2 tsps Garlic Powder 2 tsps Seasoned Salt 1 tsp Black Pepper ½ tsp Salt Add the salt, pepper, smoked paprika, onion powder, garlic powder and seasoned salt to the flour and mix well. Lightly batter the chicken then set aside. Add oil to a frying pan and sauté the onions for 1 minute. Remove the onions from the pan and set aside until later. Add the chicken to the pan and cook until just done. Cooking time will depend on the size of the chicken part. Remove chicken from pan and set aside. Remove the excess oil from the pan leaving the drippings. Add 2 tablespoons of the seasoned flour and whisk until just browned. Add the chicken broth and whisk until the sauce begin to thicken. Return the onion and chicken to the pan cover and allow chicken to simmer for another 15 to 20 minutes. |
