​Spaghetti Squash with Meat Sauce
 
1                      Spaghetti Squash
1 lb                  Ground Beef
½ Cup             Mozzarella Cheese
¼ Cup             Parmesan Cheese
1 15oz             Diced Tomatoes (drained)
2 Cups             Crushed Tomatoes
2 cloves           Garlic
½ Cup             Onion
1 tsp                Italian Seasoning
2 tsps               Salt
2 tsps               Black Pepper
 
Preheat oven to 375 degrees.
 
Carefully cut the squash in half then scoop out the center. Place the two halves on a cookie sheet with parchment paper. Drizzle with one tablespoon of olive oil then season with salt and pepper. Brush the squash to evenly coat. Turn them face down onto the parchment paper then transfer to your preheated oven a cook for 40 minutes. After 40 minutes remove them from the oven and set them aside. In a frying pan, add one tablespoon of olive oil and bring to medium heat. Saute the onion and garlic for one minute. Next add the ground beef and cook until browned. Season with the salt, pepper and Italian seasoning. Next add the crush tomatoes and diced tomatoes and continue to cook for another four minutes. After 4 minutes turn off the heat and set aside. 
Using a fork, gently pull the squash away from the skin. Top with the meat sauce, mozzarella and parmesan cheese.  Return the squash to the oven and cook and allow to cook for an additional ten minutes. After ten minutes remove from the oven then garnish with the parsley and serve.
