Thai Cucumber Salad
1 English Cucumber ¼ Red Onion 2 Scallions 2 Tbsps Canola Oil 2 Tbsps Fish Sauce 2 Tbsps Rice Vinegar 1 Tbsp Honey 1 Lime (juiced) ½ tsp Sugar 1 tsp Red Pepper Flakes To make the dressing, combine the rice vinegar, fish sauce, lime juice and canola oil. Next add the honey, red pepper flake and sugar and whisk until well combined. Using a mandoline cut the cucumber into stripes. Next combine the cucumber, onion and scallions. Pour on the dressing and mix until well coated. |
